Are you expecting a baby again soon and hoping to stock your freezer with ready to heat meals? Or maybe you are just super busy and know there are days you just won’t have time to cook? Here is a great prepare-ahead-of-time meal that can be just popped in the oven. Bonus… it tastes amazing yet it is a great stuffed shells freezer meal recipe that is dairy free, soy free, and allergy free.
Ingredients
- Two 8oz packages of Daiya brand mozzarella dairy free cheese
- Small broccoli crown chopped finely
- 8 oz mushrooms chopped finely
- 16 oz fresh baby spinach chopped (can also use 10oz frozen)
- 1/3 cup fresh basil chopped (or two tablespoons dried)
- 2 tablespoons garlic powder
- 1 tablespoon dried oregano
- 1 box of jumbo shells
- Two 24oz jars of tomato sauce
Directions
Cook shells according to the package and allow to cool. There are a variety of gluten free shells on the market these days that you can substitute for standard pasta shells. On a large skillet, water saute mushrooms, spinach and broccoli for about 3 minutes. Remove from heat and put in a large bowl. In the same bowl add Daiya dairy free cheese, garlic powder, basil, and oregano. Mix ingredients thoroughly. In a large baking pan spread a thin layer of sauce on the bottom. Stuff the shells with the mixture from the bowl and then add a layer of sauce on top. Cover loosely and bake at 350 for about 35-40 minutes.
We usually make 2 batches at a time and eat one and freeze one. This saves us a ton of time with our crazy weekday schedule.
This is becoming my go to recipe for delivering meals to new moms as well. It seems common these days for nursing moms to find that they need to eliminate dairy and/soy from their diets in order to avoid upsetting their new baby’s tummy. They are always so AMAZED to find out that this dish is totally soy and dairy free. I also choose recipes like this because if I deliver it uncooked I can drop it off when convenient for me and the family can heat it up whenever is best for them… or even freeze it if they have been blessed with plenty of food already.
