Half of my kids request a cookie cake for their birthday cake every year. That means my family eats this dessert pretty regularly (if you’re new here, I have eight children). Most of the time they will request that I make it a double-layer cookie cake! Just imagine…. a big cookie, covered with buttercream frosting, with another big cookie on top, with more frosting!! Yum!! But for this post, we’ll just stick to a single layer chocolate chip cookie cake, which is just as good (but half the fat, because well, it’s half the cake, ha ha!).

One thing is for certain about this recipe – everyone in the family, plus any guests, will love it. It makes a large portion size as well so there are certain to be leftovers, too! Although…. not with my big family.

INGREDIENTS NEEDED FOR CHOCOLATE CHIP COOKIE CAKE
•1/2 cup unsalted butter (softened)
•2 oz cream cheese (softened)
•3/4 cup brown sugar
•1/4 cup granulated sugar
•1 egg
•2 tsp vanilla extract
•2 1/4 cups all-purpose flour
•2 tsp cornstarch
•1 tsp baking soda
•1/4 tsp salt
•2 1/4 cups semisweet chocolate chips
HOW TO MAKE A COOKIE CAKE WITH CHOCOLATE CHIPS
STEP 1:
In a stand mixer, with the whisk attachment, combine butter, cream cheese, sugars, egg, and vanilla and beat for 5 minutes in a stand mixer or 7 minutes with an electric hand mixer.
STEP 2:
Scrape the sides of the bowl and slowly add the flour, cornstarch, baking soda, and salt while stirring.
STEP 3:
Add the chocolate chips and stir slowly with a mixer or fold in by hand.
STEP 4:
Cover the dough with beeswax wrap or plastic wrap and refrigerate for 30 minutes.
STEP 5:
Preheat the oven to 350F.
STEP 6:
Lightly grease a springform pan or baking dish and spread the dough evenly to the edges of the pan.
STEP 7:
Bake for about 10-15 minutes, until the edges, start to brown.
STEP 8:
Remove from the oven and let cool.
STEP 9:
Frost as desired, serve, and enjoy!
