These chicken nuggets are a great recipe for the whole family! If you have a little one who you struggle to get to eat veggies, they will love these! I mean, what child doesn’t love chicken nuggets? And you can rest easy knowing they’re free of chemicals and fillers. (You can even make them into different fun shapes and freeze them for later!)
Additionally, these work great for adults as a late snack or some football party food! They’re paleo, whole30, and so delicious dipped in some ranch. You could almost consider these a meal, ha!

Chicken nuggets ingredients:
- 1 pound ground chicken
- 2 cups sweet potato, finely shredded (approx. 2-3 whole sweet potatoes)
- 2 tablespoons coconut oil
- 2 tablespoons coconut flour
- 2 green onion sprigs, finely chopped
- 1 tablespoon garlic powder
- 1 tablespoon onion poweder
- 1 teaspoon chili powder
- 1 teaspoon salt
How to make hidden veggies chicken nuggets
Before you begin, make sure to set out all your ingredients in front of you. This makes the cooking process go much smoother.
In order to get started, preheat the oven to 400F and line a baking sheet with parchment paper; set aside.
In a large mixing bowl, add all ingredients and use hands to fully incorporate (make sure your hands are clean first!).
Using a tablespoon, scoop out the mixture and roll it into ball before flattening and shaping into your standard nugget. Place onto the baking sheet about an inch apart.
Tip: for some added fun for kids, you could try shaping them into dinosaurs or stars!
Bake the nuggets in the oven for 24-27 minutes, flipping halfway through to lightly brown both sides. Allow nuggets to cool for 5-10 minutes. Serve with your favorite dipping sauce such as guacamole or ranch. Enjoy!
Want to freeze them for later? Simply place the cooled nuggets into an airtight container and freeze. When ready to eat, remove from the freezer and place on a baking sheet. Bake in the over at 400F for 10-12 minutes and allow time to cool.
