Being from upstate New York, not too far from Buffalo, my husband and I are pretty picky when it comes to our chicken wings. We currently live in Dallas, TX and unfortunately we have yet to find a good place for wings.
There are so many different ways that you can prepare and season wings these days – there is the classic Buffalo style that varies in the degrees of hotness, garlic, BBQ, lemon pepper, sweet & sour, and Cajun to name a few.
Some of my husband’s favorite wings were from a local Mom & Pop pizza place in upstate New York that were Cajun flavored. Now that we are in Texas and can’t get those wings anymore, I thought I’d experiment a little and try to make them myself. I’m sure I will never get the same exact flavor of the ones my husband loved in New York, but these ones are still pretty good.
Ingredients:
For wings –
2.5 pounds of wings, cut at joints
1 tablespoon of garlic powder
1 tablespoon of paprika
1/4 tablespoon of ground black pepper
1/2 tablespoon of onion powder
1/2 tablespoon of ground thyme
1/2 tablespoon of oregano
1/2 tablespoon of salt
1 teaspoon of chili powder
For sauce –
1/2 cup of unsalted butter, melted
2 teaspoons of minced garlic (2-3 cloves)
1 teaspoon of Cajun seasoning (or reserve 1 teaspoon from wing seasoning)
2 tablespoons of parmesan cheese
1 teaspoon of parsley flakes
Directions:
For sauce –
Mix all ingredients together in a small bowl.
For wings –
1. Preheat oven to 350 degrees Fahrenheit.
2. Rinse and cut wings, pat dry. In a large bowl, season wings with garlic powder, paprika, black pepper, onion powder, thyme, oregano, salt, and chili powder.
3. Add wings to a greased baking pan. Bake uncovered for 25 minutes. After 25 minutes, flip wings. Bake for an additional 15 minutes.
4. Remove pan and with a cooking brush or spoon, generously add the chicken wing sauce to the wings. Return wings to the oven, cook for an additional 10 minutes or until chicken is cooked. For crispier wings, turn heat up to 425 degrees for the last ten minutes.
