My entire family loves pancakes! Whenever I make pancakes it’s usually for dinner and rarely for breakfast.
I make pancakes from scratch (one of the few things that I do) from a recipe that I found years ago. Everyone is a bit different with what they like to top their pancakes with – syrup, brown sugar, powdered sugar, peanut butter, fresh fruit – we have all kinds in our family.
Well, I decided to shake things up a little more with our pancakes and try some that are Christmas-y. These eggnog pancakes would be perfect for Christmas morning, or a special winter weekend breakfast (or dinner), or anytime really!
Ingredients:
1 1/2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 eggs
4 Tbls. butter, melted
3/4 cup eggnog
Directions:
Place a frying pan or skillet over medium heat and add a tablespoon of oil or butter to the pan. Or you can use an electric griddle set to medium heat (about 300) which makes it quicker if you are cooking for a large family. And if your griddle is seasoned well (used a lot) you shouldn’t need any butter or oil on it.
In a large bowl, whisk together all dry ingredients.
In a separate bowl, mix eggs, eggnog, and butter.
Slowly add wet ingredients to the dry ingredients and stir until combined.
Using a 1/4 cup measuring cup, portion out the batter into the pan (or griddle) and flip when the tops begin to bubble and underside has turned a toasted brown color, about 2 minutes.
Cook for 2 more minutes on the other side and then remove to a warm plate as you repeat with the rest of the batter. We keep the pancakes warm by putting them on a plate and covering with a clean dish towel.
Serve with powdered sugar, or maple syrup, or whatever you like!
