I love the convenience of the crock pot and my husband loooooves anything lemon. So I often use the crockpot to make this quick and simple lemon chicken that requires only 4 ingredients.
- 6 boneless, skinless chicken breasts
- 1/4 c. butter
- 2 c. lemon juice
- 1 packet of Italian dressing seasoning
**My husband loves lemons, so this recipe calls for a lot of lemon juice; if you are just your average lemon-liker, you may want to decrease the amount of lemon juice to your liking, and add some chicken broth in its place.**
1. Put chicken in the crock pot and top with pats of butter.
2. Add the lemon juice and sprinkle with seasoning mix.
3. Cook on low for 6 hours.
Serve over rice or throw in some potatoes for the last hour or two of cook time.
Sorry, I forgot to take the all-important after picture of the finished product because we were in a rush to eat and get the boys out the door for hockey practice!

I have done it but not with this recipe. I like the potatoes nice and soft, so I would put them in for two hours.

I love lemon but 2 cups was way too much I think the chicken broth and lemon works much better and then I also added a bit of cream cheese to cream and balance out at the end
