Dr. Seuss’ birthday is March 2nd. Our family’s absolute favorite Dr. Seuss book is Green Eggs and Ham. Recently we read this favorite book of ours after dinner and had a fun dessert to go along with it – Green Eggs and Ham cookies.
I saw a picture of these cookies on Pinterest and thought they were super cute. They are very simple to make. Just make your favorite cut-out cookie recipe (see below for our recipe) and cut them out in a fried egg shape. I just simply rolled out the dough and used a knife to cut the different egg shapes.
Then after you bake and let them cool, frost them with your favorite (white) frosting recipe. Finish them by topping with a green candy melt, like the ones pictured below (I bought ours at Walmart).
