Mini Apple Pie Bites

These apple pie bites are perfect for a mini treat for the kids or an adorable addition to the food table at your holiday party. Each apple pie is packed full of everything that would be in a regular full slice of pie, just on a smaller scale.

Ingredients

  • Pie Crust homemade or store-bought; whichever you prefer
  • 2 Large Apples peeled, cored and chopped
  • 2 Tablespoons Sugar
  • 1 Tablespoon Flour
  • 4 Tablespoons Butter softened
  • 1/2 Teaspoon Cinnamon
  • 1 Teaspoon Vanilla

Instructions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, combine the chopped apples, flour, sugar, cinnamon and vanilla.
  3. Roll your dough out and use a small cookie cutter (or even the top of a jar!) to create small circles.
  4. Spray a small muffin pan with cooking spray and place the dough circles in so they fill the tin.
  5. Scoop the apple mixture into each mini pie crust.
  6. Bake for 30 minutes.
  7. Let cool.
  8. Top with ice cream and cinnamon, if desired.
